Description

A chewy, paper-thin crepe made from hot-water wheat dough (the exact same pancake used for Peking Duck). A Beijing specialty where diners self-wrap their favorite stir-fries, like shredded pork in sweet bean sauce or stir-fried bean sprouts, inside the pancake.

  2. Whisk boiling water slowly into flour (hot-water dough), then add a splash of cold water and knead until smooth. (Boiling water prevents the cooked dough from hardening, keeping it chewy).
  3. Rest the dough, form into ping-pong balls, and flatten.
  4. The Pro Technique: Generously brush oil (sesame oil) on one side of two dough discs, and press them together 'oil-sides facing inwards'.
  5. Roll the stacked pair together with a rolling pin until paper-thin and translucent.
  6. Cook on a dry griddle over medium heat until faint brown spots appear on both sides.
  7. While piping hot, gently peel them apart from the edge. The trapped oil allows them to separate perfectly into 'two ultra-thin crepes'.
