- Use slightly hard, day-old cold rice (or long-grain Indica rice) with reduced moisture.
- Finely dice Jinhua ham (or Char Siu), peeled shrimp, rehydrated shiitake, bamboo shoots, and scallions into 'tiny cubes exactly the size of a rice grain'. Flash-fry the shrimp.
- Heat a wok until smoking, swirl oil, add beaten eggs. Before they set, immediately dump in the cold rice.
- The Pro Technique 'Jin Bao Yin' (Gold wrapping Silver): Smash the rice with the back of the ladle while violently tossing the wok, coating every single grain of rice in egg yolk until it glows golden.
- Toss in all the diced ingredients and green peas. Season ONLY with salt, white pepper, and chicken bouillon (NEVER use soy sauce, as it ruins the golden color).
- Stir-fry on absolute maximum heat until the individual grains literally jump and dance in the wok.
