Instructions

  2. Soak raw peanuts (skin-on) in water overnight.
  3. Prep pork trotters (collagen-rich part) by removing hairs, parboil, and wash clean of scum and blood.
  4. Put plenty of water, trotters, soaked peanuts, sliced ginger, green scallion parts, and a little rice wine in a pot.
  5. Bring to boil, simmer very slowly on low for 2-
  6. hours (pressure cooker saves time).
  7. When the trotter skin turns jelly-gooey and peanuts are fluffy enough to crush with fingers, season with salt only.
  8. Plate, optionally garnish with cilantro or white pepper.
