- Score the surface in a fine crosshatch pattern (pinecone cut), cut bite-sized. Soak in water multiple times to draw out blood.
- Boil water, blanch kidneys for just '10-
- seconds', shock in ice water immediately when they bloom like flowers.
- Heat 'Black Sesame Oil' in another pot, fragrantly sauté massive sliced ginger (Lao Jiang).
- Pour rice wine and water (or pork broth) and boil.
- Toss in blanched kidneys, simmer briefly (~30s) to avoid overcooking.
- Season with salt and serve immediately.
