  • Ginger
  • Scallions
  • Salt
  • Rice wine

Instructions

  2. Purge sand from clams (or littlenecks) in salt water thoroughly.
  3. Peel winter melon thickly, remove pith, and cut into 5mm thick slices (or bite-sized) for quick cooking.
  4. Put water, winter melon, and sliced ginger in a pot and heat.
  5. Simmer on medium for 15-
  6. mins until the winter melon becomes translucent and tender.
  7. Add a little rice wine, then toss in the purged clams all at once.
  8. When the clam shells pop open, releasing natural salt and dashi, taste and add a little salt if necessary.
  9. Plate and scatter chopped scallions.
