- Raw pumpkin
- Passion fruit(flesh and seeds)
- Sugar(or Honey)
- White vinegar
- Salt

- [Pumpkin Prep] Peel fresh pumpkin (Nangua), remove pith and seeds. Slice 'ultra-thin' (~1-2mm) using a slicer (or knife).
- Sprinkle a little salt on the slices, massage lightly, leave
- mins to draw out moisture.
- Wash off salt briefly with water, squeeze out water firmly (removes raw smell and makes it crisp).
- [Marinade] Halve fresh 'passion fruit (Baixiangguo)', scoop flesh and seeds (keep black seeds for texture) into a bowl. Mix with sugar (or honey) and a little white vinegar (or lemon juice).
- Steep the drained pumpkin in the marinade.
- Chill thoroughly in the fridge overnight (at least hours) to completely infuse the fruity sweet/sourness before serving.
