  • Passion fruit(or White vinegar and sugar)

Instructions

  3. Soak in vinegar water (extra) for a few mins immediately to prevent discoloration.
  4. Boil water, blanch lotus root for just '30s-
  5. min' (absolutely do not overboil. Crispness is life).
  6. Drain immediately, shock in ice water, and drain thoroughly.
  7. [Marinade] Mix flesh and seeds of fresh Taiwanese 'passion fruit (Baixiangguo)', sugar, and a little salt to make a special sauce (or a plain sweet vinegar sauce of white vinegar, sugar, chili, sesame oil is also common).
  8. Toss the drained lotus root in the marinade.
  9. Chill in the fridge for hours to half a day to infuse flavors before serving.
