- [Dou Miao Prep] In Taiwan, 'Dou Miao' isn't sprouts, but the tender young leaves at the tips of snow pea vines. Remove hard stems, luxuriously using only the tender leaf tips (the reason it's a premium veg).
- Wash gently with water, drain thoroughly.
- Heat wok until smoking, add a little oil, toss in minced garlic to release aroma instantly.
- Vigorously dump in Dou Miao.
- Since it cooks extremely fast, add a little salt (or chicken broth) and a secret dash of rice wine, tossing violently on high for just '10-
- seconds'.
- When Dou Miao wilts slightly and its unique green sweet bean aroma rises, remove from heat immediately and plate.
