  • Cucumber
  • Garlic
  • Red chili
  • Black vinegar
  • Sesame oil

Instructions

  2. [Rehydrating Coral Weed (Crucial)] Wash salted or dried Taiwanese specialty 'Coral Weed (aka: Sea Bird's Nest)' well, soak in plenty of water for half a day to overnight to completely desalt and puff up translucent. *Do not heat, as boiling melts it.
  3. Drain rehydrated coral weed firmly, cut to easy-to-eat lengths.
  4. Julienne cucumber and carrots.
  5. [Dressing] Mix massive grated garlic, minced red chili, Taiwanese black vinegar (Wu Cu), soy sauce, sesame oil, and a little sugar.
  6. Put coral weed and veg in a bowl, add dressing, massaging firmly to toss.
  7. Chill ice-cold in the fridge to let the seaweed absorb the dressing flavors before plating.
