Ingredients
- Unsalted butter
- Cake flour
- Bread flour
- Maltose
- Milk powder
- Sugar
Instructions
- [Authentic Recipe]
- [Dough (You Pi/You Su)] Make water-dough and oil-dough, but the decisive difference from Sun Cake is luxuriously using 'premium unsalted butter' instead of shortening/lard.
- Roll and fold the dough repeatedly to create a pastry crust with dozens of layers.
- [Filling (Milk Maltose)] Knead maltose, powdered sugar, a little flour, massive 'milk powder', and butter to make a sticky filling with a strong milk flavor.
- Wrap the filling in the dough, roll out into a flat disc a size larger than Sun Cake (~15cm diameter).
- Bake crispy in an oven until the surface puffs up slightly and a rich butter aroma drifts.
