  4. Rehydrate dried shrimp (Xiami) in a little water, mince (keep soaking liquid).
  5. Heat oil in a wok, fragrantly sauté minced garlic and dried shrimp on low.
  6. Toss in Wawa Cai, stir-fry on medium to coat in oil.
  7. Pour the shrimp liquid and a little chicken broth (or water).
  8. Cover and 'steam-simmer (Men)' on low for 3-
  9. mins.
  10. When the cabbage is wilted soft and sweetness is drawn to the core, season with salt and white pepper to finish (some shops thicken it).
