  • Rooster testicles(Ji Fo)
  • Black sesame oil
  • Ginger(Lao Jiang)
  • Rice wine
  • Salt
  • Goji berries

Instructions

  2. [Ji Fo Prep] Prepare 'Rooster Testicles (Ji Fo: quail-egg size, fine blood vessels visible on the surface)' from Taiwanese markets. Wash extremely gently under running water so the thin skin doesn't break.
  3. Heat plenty of 'Black Sesame Oil' in a wok, sauté sliced ginger (Lao Jiang) slowly without burning to transfer aroma to the oil.
  4. Gently toss the washed Ji Fo into the wok, fry gently until surface color slightly changes.
  5. Pour rice wine and a little water, simmer on low for a few mins to cook through.
  6. Season with salt, white pepper, and a few goji berries.
  7. Overcooking bursts them and melts the insides, so plate quickly when they puff up tight and plump.
