- Procure fresh pig brain. Using a toothpick under water, painstakingly peel off the 'entire' web of red blood vessels clinging to the surface without breaking the delicate brain. (Failing this leaves a foul, bloody stench).
- Shape aluminum foil into a small bowl and place the prepped brain inside.
- Completely bury the brain under a 'fiery Ma La sauce' made of Pixian Doubanjiang, massive grated garlic, chopped Pao Jiao (pickled chilies), Sichuan pepper powder, soy, and sesame oil.
- Place the foil bowl directly on a charcoal grill. Let the sauce boil furiously for 10-
- minutes until the brain is cooked through.
- Garnish with scallions and cilantro.
