- [Tian Ji Prep] Skin, gut, and chop fresh edible frogs (Tian Ji) available in Taiwanese markets (bone-in like chicken). Parboil briefly to remove scum.
- Heat plenty of 'Black Sesame Oil' in a clay pot (or wok).
- Slowly sauté smashed 'whole unpeeled garlic cloves' and thick-sliced ginger without burning to completely transfer aroma to oil.
- Toss in frogs, sear the surface quickly on high.
- Add soy sauce, rice wine, and a little rock sugar (the basics of 'Sanbei'), stir-fry-braise on high until liquid evaporates and the meat glazes.
- Right before turning off heat, dump in a mountain of raw 'Jiucengta (Taiwanese basil)', cover and steam for a few seconds to trap the basil aroma.
