- Rock sugar

- Cut thick, large King Oyster Mushrooms (Xingbaogu) into irregular chunks (or thick rings). Scoring the surface finely helps flavor penetration.
- Heat plenty of 'Black Sesame Oil' in a clay pot (or pan).
- Slowly sauté smashed unpeeled garlic and thick-sliced ginger without burning to transfer aroma to oil.
- Toss in mushrooms, fry on high until the surface gets a savory brown char (evaporate some mushroom moisture here).
- Add the 'Sanbei' basics: soy sauce, rice wine, rock sugar.
- Boil down vigorously on high, stir-fry-braising until the sauce thickens and completely coats the mushrooms.
- Right before turning off heat, mountain-heap raw 'Jiucengta (Taiwanese basil)', cover and steam for a few seconds to finish.
