- [Turtle Prep (Artisan Skill)] Butcher fresh softshell turtle (Jia Yu/Bie), parboil briefly to carefully peel the thin surface skin. Chop the shell (a gelatin mass) along with the meat into bite-sized pieces.
- Heat plenty of 'Black Sesame Oil' in a clay pot, slowly sauté unpeeled whole garlic and thick-sliced ginger without burning.
- Toss in turtle meat and shell, sear surface quickly on high.
- Add soy sauce, rice wine, rock sugar (Sanbei basics), stir-fry-braise rapidly on high until liquid evaporates and turtle glazes (collagen dissolves, making sauce extremely rich).
- Right before turning off heat, mountain-heap raw 'Jiucengta (Taiwanese basil)', cover and steam.
