  2. [Black Gold Prep] Prepare 'Lao Cai Pu', the ultimate preserved food repeatedly salted/fermented and sun-dried for 10-30+ years in jars in Hakka homes. It's pitch-black, wrinkled, with amino acid crystals on the surface.
  3. Briefly wash salt and dust off the surface, cut appropriately (highly salty so a little suffices). Many shops mix young (regular) Cai Pu or fresh daikon to balance flavor.
  4. Parboil bone-in chicken thighs.
  5. Put plenty of water, chicken, Lao Cai Pu, ginger slices, and a few garlic cloves in a pot.
  6. Simmer slowly on low for 1-
  7. hours.
  8. Done when the pitch-black extract, intense umami, and unique acidity from Lao Cai Pu dissolve into the broth. Taste before adding salt as Lao Cai Pu releases salt.
