Ingredients

  • Wood ear
  • Scallions
  • Ginger
  • Sesame oil

Instructions

  2. [Identity of Ganzhe Sun] Named bamboo shoot (Sun), but actually the soft, unleafed core at the tip of 'Sugarcane (Ganzhe)' (a rare part yielding little per cane).
  3. Wash 'Ganzhe Sun' sold pre-boiled in markets, cut to easy-to-eat lengths.
  4. Shred lean pork, season with soy sauce and wine.
  5. Cut scallions, ginger, rehydrated wood ear.
  6. Heat oil in a wok, fragrantly sauté ginger and scallions, add pork to fry.
  7. Vigorously dump in wood ear and Ganzhe Sun, stir-fry rapidly on high.
  8. Cooks instantly as it's not hard like bamboo. Season with salt, a little soy sauce, white pepper, sesame oil (some shops stir-fry Hakka-style with a little acidity).
  9. Remove from heat while the crisp, crunchy texture remains.
