- Cool the braised intestine, tightly stuff thick 'raw long scallions (or bundled green scallions)' inside the tubular intestine without gaps.
- Wipe surface moisture firmly.
- Heat 180°C+ hot oil in a wok.
- Drop the scallion-stuffed intestine whole into the oil, frying fragrantly for a few mins until the surface is golden and 'ultra-crunchy'.
- Drain oil, slice into bite-sized rings carefully so the scallions don't fall out.
- Plate and serve generously with special 'pepper salt (Jiao Yan Fen)'.
