  • Bone-in free-range chicken
  • Rice wine(massive)
  • Black sesame oil
  • Ginger(Lao Jiang)
  • Herbs like Dong Quai
  • Salt

Instructions

  1. [Authentic Recipe]
  2. [Chicken & Ginger Sauté] Heat plenty of 'Black Sesame Oil' in a clay pot (or wok), fragrantly sauté thick-sliced ginger (Lao Jiang) until crispy.
  3. Toss in chopped bone-in Taiwanese free-range chicken (Tu Ji), sauté until surface color changes.
  4. [100% Rice Wine Simmer] Without a drop of water, dump multiple bottles of Taiwan's 'Red Label Rice Wine (22% ABV)' until chicken is completely submerged.
  5. Add a spice bag with Dong Quai, lovage, cassia, goji berries.
  6. [Ritual of Flame] When boiling, 'ignite' the rice wine directly in the pot with a lighter. Blue flames rise tens of centimeters (careful!); wait until alcohol completely burns off and flames die naturally (leaves only the wine's sweetness).
  7. Season only with a little salt, serve piping hot.
