  3. Wash it, blanch briefly in boiling water for a few seconds, and drain.
  4. Mince garlic, ginger, and red chili.
  5. Heat oil in a wok, fragrantly sauté the aromatics.
  6. Vigorously dump in Hai Xianggu, toss on high.
  7. Add soy sauce, oyster sauce, a little sugar, and wine; toss violently for dozens of seconds to meld flavors (overcooking turns it rubbery).
  8. Right before turning off heat, dump in two handfuls of raw 'Jiucengta (Taiwanese basil)' to transfer aroma and finish.
