Instructions

  2. [Jiaobai Sun Prep] Peel the green skin off Taiwan's specialty 'Jiaobai Sun' (Water Bamboo: resembles bamboo shoots but is an aquatic grass, softer and sweeter), slice the white edible part diagonally thinly (or chunky).
  3. [Jinsha (Golden Sand) Sauce] Boil salted duck egg 'Xian Dan', extract and finely crush only the yolk (no whites). Mince scallions and garlic.
  4. Heat a little oil in a wok, briefly sauté water bamboo to evaporate some moisture, then remove.
  5. Heat generous oil (or butter) in the wok, toss in crushed yolk. Sauté on low until yolk emulsifies with oil, foaming up like crab bubbles into 'golden foam (Jinsha)'.
  6. Return water bamboo, add garlic and scallions, toss on high to coat the surface seamlessly with the golden sauce to finish.
