- [Jiaobai Sun Prep] Prepare fresh 'Jiaobai Sun' (Water Bamboo) sold in Taiwanese markets, wrapped in layers of green leaves (husks). *Resembles bamboo shoots but is the swollen stem of a grass plant, softer and without astringency.
- Absolutely do not peel. Place directly on a charcoal grill net (oven/fish broiler works too).
- Roll it over medium-high heat, grilling slowly for 10-
- mins until the outer green husk 'chars pitch-black'.
- The water bamboo's own moisture evaporates inside the husk, 'steam-baking' it and condensing incredible sweetness into the white flesh inside.
- Done when the husk is black and the inside feels soft.
- Plate piping hot, serve garnished with Taiwan's unique 'sweet mayonnaise (Shala Jiang)' and 'pepper salt'.
