  • Rice wine
  • Goji berries
  • Salt

Instructions

  3. Heat plenty of Taiwan's specialty 'Black Sesame Oil' in a clay pot (or pan).
  4. Add massive 'thin-sliced ginger (Lao Jiang)', sauté slowly on low until edges curl and crisp, transferring aroma to oil.
  5. Toss in Songban pork, fry rapidly on high until surface turns white.
  6. Pour plenty of 'rice wine' and add goji berries.
  7. Season with salt and rock sugar, boil down slightly on high while evaporating alcohol.
  8. Remove quickly from heat while pork fat and black sesame oil completely emulsify, retaining the unique 'crisp, crunchy' bite of Songban pork.
