  3. Instead of cutting, 'tear thinly by hand along the fibers (Shou Si)' (increases surface area for better flavor absorption).
  4. Shred pork belly (or Hakka salted pork).
  5. Oil a wok, fry pork to extract massive 'pork fat (lard)'.
  6. Add minced garlic and red chili for aroma.
  7. Toss in hand-torn Gui Zhu Sun, stir-frying to coat the bamboo entirely in pork fat.
  8. Add soy sauce, a little sugar, wine, water; cover and 'stir-fry-braise (Men Chao)' on medium for 10-
  9. mins until bamboo is wilted and soft.
  10. Done when liquid reduces and soy color infuses the bamboo.
