- [Identity & Prep of Long Chang] Prepare the 'intestine' of a giant Mola Mola landed in Hualien ports (very thick, pure white, and meaty). Wash carefully with salt and vinegar to remove slime, cut into bite-sized rings (or strips).
- Boil water, blanch the cut Long Chang for 'just a few seconds', shock in ice water (creates incredible crunch. Overcooking makes it rubber).
- Julienne celery, ginger, and red chili.
- Heat oil in a wok, fragrantly sauté garlic, ginger, and chili.
- Add celery to sauté briefly, vigorously dump in blanched Long Chang.
- Add a little salt, white pepper, and rice wine, toss violently on high for 'just dozens of seconds'.
- Remove quickly from heat while Long Chang is translucent white and retains a crunchy bite.
