- Put in a bowl, massage firmly with soy sauce, massive grated garlic, rice wine, five-spice, and a little sugar; marinate for ~

- Leaving slight surface moisture, generously coat with coarse 'sweet potato flour'; wait a few mins for batter to set.
- Drop into 180°C medium-high oil, fry slowly (~3-

- Right before done, flash-fry a handful of raw 'Jiucengta (Taiwanese basil)' in the oil until crisp.
