- Roughly chop Napa cabbage, sprinkle with salt, leave for hours, squeeze out moisture and astringency firmly.

- Add Taiwanese condiment 'Doufu Ru (salty fermented tofu paste)', white vinegar, sugar, and generous sesame oil (or chili oil) to make a smooth golden sauce.
- Put drained cabbage in a bowl, generously add golden sauce and massage firmly.
- Store in an airtight container in the fridge overnight to a few days for fermentation and flavor melding.
- Done when acidity, sweetness, and Doufu Ru richness completely unify.
