  3. Shred lean pork (Rou Si), season with soy sauce, wine, a little potato starch.
  4. Julienne long scallions and red chili.
  5. Heat oil in a wok, briefly fry pork until color changes, remove.
  6. Add oil, sauté minced garlic and chili, toss in Dougan.
  7. Fry until Dougan surface is slightly crisp (draws out soy savoriness), return pork and scallions.
  8. Add soy sauce, oyster sauce, sugar, a little water; stir-fry on high until liquid evaporates.
  9. Drizzle sesame oil to finish.
