Instructions

  3. Season with salt, wine, egg white; coat heavily in sweet potato flour (or potato starch).
  4. Deep-fry in 180°C hot oil until surface is golden and 'crisp'.
  5. Cut onion, bell pepper, and the [Taiwanese secret] 'canned pineapple' into bite-sized chunks.
  6. [Tangcu (Sweet/Sour Sauce)] Mix
  7. tbsp ketchup,
  8. tbsp white vinegar,
  9. tbsp sugar, water, and a little soy sauce.
  10. Briefly sauté veg and pineapple in a wok, pour in Tangcu sauce and boil.
  11. Thicken with potato starch slurry, toss in freshly fried fish.
  12. Toss the wok a few times to coat the fish batter 'glossily' in sweet/sour gravy to finish.
