- [Jinsha Sauce] Boil salted duck egg 'Xian Dan', extract only yolk, crush finely into powder with a fork.
- Heat generous oil (or butter) and minced garlic in a wok, toss in crushed yolk.
- Sauté slowly on low; yolk emulsifies with oil, bubbling into 'golden foam (Jinsha)'.
- Vigorously return bare-fried pumpkin, toss wok on high.
- Done when the golden sauce coats the pumpkin surface seamlessly like 'powder snow'.
