  • Pork spare ribs
  • Ketchup
  • Worcestershire sauce(La Jiangyou)
  • Sugar
  • White vinegar
  • White sesame

Instructions

  2. [Pai Gu Prep] Cut bone-in pork ribs bite-sized, season with soy, wine, egg, potato starch.
  3. Fry slowly in 170°C medium oil, raise temp at the end to crisp, drain.
  4. [Magic Kyoto Sauce] The Taiwanese way: Mix '
  5. tbsp ketchup', '
  6. tbsp Worcestershire sauce (La Jiangyou)', '
  7. tbsp sugar', white vinegar, and a little water in a bowl (Mainland uses black vinegar/soy, Taiwan mainly uses ketchup/Worcestershire).
  8. Heat a little oil in a wok, sauté minced garlic.
  9. Pour Kyoto sauce, boil down until gooey.
  10. Vigorously drop in fried ribs.
  11. Toss wok on high until the batter is completely coated in 'reddish-brown, glossy' sweet/sour sauce to finish. Sprinkle white sesame.
