Instructions

- Procure absolutely fresh, sashimi-grade 'live and moving' swimming crabs (or shrimp/mantis shrimp). Scrub the shells violently to remove all dirt.
- Pry open the carapace, remove gills/sandbags, and chop into bite-sized pieces.
- In a bowl, mix premium Sheng Chou (light soy), black vinegar, copious Baijiu (for sterilization/flavor), massive minced garlic, ginger, raw red chilies, and cilantro.
- Submerge the raw seafood completely in the marinade and refrigerate for 4-
- hours.
- (Pro Secret) After marinating, place in the freezer briefly until 'semi-frozen'. This sets the crab tomalley into a sticky, premium jelly.
