Description

The ultimate simple dish omnipresent on Northeast Chinese dining tables. Cucumbers, radishes, raw eggplants, and scallions are served completely raw (just chopped). Diners dip them heavily into a piping hot, savory soybean paste fried with eggs or pork (Ji Dan Jiang / Rou Jiang).

  • Northeast Da Jiang(Soybean paste)
  • Eggs(or Minced pork)
  • Oil

Instructions

  2. (Veggie Prep) Chop cucumbers, green radishes, soaked raw eggplants, bell peppers, white scallion stalks, and cilantro into sticks. Add sheets of dried tofu skin (Tofu Pi). Pile everything high on a massive platter. (Literally just chopping).
  3. (Dip 'Ji Dan Jiang' Prep) Beat eggs. Heat generous oil in a wok, scramble the eggs fluffy, chop finely, and remove.
  4. Add more oil, fry minced scallions, then dump in
  5. tbsp of 'Northeast Da Jiang' (or Huang Jiang - salty soybean paste). Fry slowly until the oil and paste separate, releasing a deeply roasted aroma.
  6. Return the eggs, add a splash of water and sugar, and reduce for a few minutes into a thick, piping hot, savory 'Egg Miso' (Ji Dan Jiang). Pork mince versions (Rou Jiang) are also popular.
