Description
A national snack sold in every Chinese convenience store and train station. Chicken feet (Momiji) boiled until pure white, then soaked in the brine of lacto-fermented green chilies (Pao Jiao). Addictively sour, spicy, and crunchy.

- White vinegar
- Salt
- Sugar
- Ginger

- Clip the claws off chicken feet, wash cleanly, and chop in half lengthwise.
- Boil for 10-
- mins with scallion, ginger, wine, and Sichuan pepper. The absolute rule is NOT to overcook; they must remain crunchy.
- Remove and wash aggressively under running water (or ice water) to strip all surface fat and slime. This turns the skin 'pure white' and tightens the texture.
- In a large container, mix diluted white vinegar, salt, sugar, and the heart of the dish: an entire jar of 'Pao Jiao' (fermented green chilies WITH their brine).
- Submerge the chicken feet completely and refrigerate for 1-
- days.
- Done when the piercing sourness and heat have penetrated the collagen-rich skin to the core.
