- In a separate pan, heat premium clear chicken broth (Qing Tang), season with salt, wine, and a dash of soy, then thicken with starch. (Authentic versions NEVER use ketchup or sweet-sour glaze like Japanese Tenshinhan).
- Place the omelet on rice and pour the clear savory gravy over it.
