- (Filling) Contains pork, cabbage, and chives, but NEVER incorporates 'raw garlic' into the filling (it destroys the meat flavor). Scallion-ginger water is used instead.
- (Frying) Often made by pan-frying leftover boiled dumplings the next day (Jian Jiao), or shallow-frying the bottoms aggressively in heavy oil (Guo Tie). Focuses on the thick crust's crunch and chew, rather than the delicate steamed lattice of Japanese Gyoza.
- (Eating) Dipped heavily into pure black vinegar (Zhenjiang), with absolutely no soy sauce or chili oil.
