Description
Japanese 'Chimaki' is often a sweet rice confection. Southern Chinese (Fujian/Taiwan) 'Rou Zong' is entirely different. A massive, heavy carbohydrate bomb of soy-sauce-marinated sticky rice stuffed with giant chunks of braised pork belly, shiitake, and a whole 'Salted Duck Egg Yolk'.

- (Luxurious Fillings) Prepare pork belly marinated overnight in spices, rehydrated shiitake, dried shrimp, peanuts, and the ultimate highlight: 'Xian Dan Huang (Salted duck egg yolk)'.
- Overlap two large bamboo leaves to form a funnel.
- Add a layer of seasoned rice, top with the pork, shiitake, and golden egg yolk, then cover with more rice.
- Fold into a tight pyramid and bind fiercely with twine.
- Do not steam. Submerge completely in boiling water and 'boil/braise' on low heat for 2-
- hours. This melts the pork fat and egg yolk richness entirely into the core of the rice.
