Description

Japanese wontons typically float in a 'light soy or salt soup'. In Sichuan, 'Chao Shou' (wontons) have ZERO soup. Freshly boiled wontons are dropped directly into an intensely fiery homemade chili oil and sweet reduced soy sauce (Fu Zhi Jiang You), tossed, and eaten.

  • Wonton wrappers
  • Minced pork
  • Chili oil(Hong You)
  • Sweet reduced soy sauce
  • Garlic
  • Sesame

Instructions

  2. (Folding) Knead minced pork with salt and ginger juice. Place a dab of meat in the center of a square wonton wrapper, fold into a triangle, then pull the two opposite corners together and overlap them like 'crossed arms' (Chao Shou—the origin of the name).
  3. (The Sauce) In a bowl, place
  4. tbsp of the soul of Sichuan: 'Hong You' (fiery homemade chili oil), grated garlic, and [Fu Zhi Jiang You (Sweet Reduced Soy Sauce boiled down with rock sugar and star anise)]. This sweet/spicy contrast is everything.
  5. Boil the wontons until they float and turn translucent. Drain the water completely.
  6. Dump the hot wontons into the sauce bowl, garnish with white sesame and scallions.
