- Marinate shredded pork (Rou Si) with a little soy, wine, starch.
- Cut water spinach (or spinach) 5cm wide.
- Heat oil in wok, fry minced garlic and chili.
- Add pork; when color changes, add the star 'Shacha Jiang' 1-
- tbsp and fry fragrantly (*Transfer Shacha aroma to oil).
- Vigorously toss in greens, stir-fry quickly on high.
- Season with salt and a little water, remove from heat while greens are crisp.
