Recipe

Ingredients

  • Thick Chinese noodles
  • Pork belly
  • Dried shiitake
  • Wood ears
  • Daylily
  • Egg
  • Soy sauce
  • Sichuan pepper(for hot oil)

Instructions

  1. [Authentic Recipe & Differences]
  2. (Broth Base) Rehydrate dried shiitake, wood ears, and the essential 'Daylily buds (Jin Zhen Cai)'. NEVER discard the soaking water; it is pure umami broth.
  3. Slice pork belly, fry with scallion and ginger to render fat.
  4. Add the rehydrated mushrooms/daylilies, pour in the mushroom water and chicken broth.
  5. Season heavily with soy, dark soy (for color), and salt. Simmer to meld flavors.
  6. (Thickening: Da Lu) Add massive starch slurry until the soup becomes an 'extreme, slime-like thick gravy'.
  7. Drizzle in beaten egg to bloom fluffy egg flowers.
  8. [The Ultimate Pro Move]: Heat Sichuan peppercorns in oil in a tiny pan until smoking. Violently splash this hot oil over the finished gravy to detonate the aroma.
  9. Pour the massive gravy over boiled thick hand-pulled noodles.

Trivia

[Trivia] 'Lu' means thickened rich gravy. For Beijingers' birthdays or celebrations, eating long noodles symbolizes 'longevity', and Da Lu Mian is absolutely mandatory as the star of the feast.

Eating tips & etiquette

[Unique Eating] It is NOT a noodle soup; it's a mixed noodle dish. Use chopsticks to thoroughly mix the thick gravy from top to bottom until every noodle is coated, then slurp loudly.
