- [Thorough Washing & Odor Removal] Massage coarse salt and flour (or vinegar) into beef tripe (Niudu) to completely wash off dirt and intense odor from between the folds. Then parboil 30+ mins in water with scallions, ginger, rice wine, wash under running water. Neglecting this leaves inedible odor.
- [Beef-specific Lao Lu] Instead of regular soy soup, boil beef-specific Lu Zhi blending beef bone broth base, soy, sweet Jiangyou Gao, rock sugar, star anise, cinnamon, fennel, dried tangerine peel.
- [Long Slow Simmering] Put whole prepped tripe in soup, simmer patiently on ultra-low for 2-
- hrs until 'exquisitely firm'—chopstick-tender but retaining elasticity. Turn off heat, steep overnight to completely set beef umami and spice aroma in the countless net holes. Slice thin to serve, scatter scallions and sesame oil.
