  2. [Enoki Prep & Washing] Trim enoki (Jinzhengu) bases, separate into 'small bundles' without breaking apart, wash gently.
  3. [Light Lu Zhi for Mushrooms] Enoki absorbs soup flavor directly, so overly strong Lu Zhi makes it too salty. Blend soy, rice wine, a little rock sugar, star anise, a little Taiwan black vinegar to boil a slightly thin, light soup.
  4. [Second-perfect Shabu-shabu Heating] Put enoki bundles in boiling Lu Zhi, cook briefly on medium for just '30-
  5. secs'. Over-simmering loses the unique crisp texture and makes them easily stuck in teeth. Pull out vigorously with a strainer the moment they turn translucent and slightly wilt.
  6. [Finishing] While hot, drizzle grated garlic and a few drops of sesame oil, tossing to seal mushroom umami and herb aroma.
