- julienned shreds (San Si): paper-thin 'Dried Tofu Skin (Tofu Pi)', cucumber, and mung bean noodles (or kelp).
- Flash-blanch the tofu skin and noodles, shock in ice water, and squeeze violently dry. Julienne cucumber to the exact same thickness.
- (Sauce Difference) NOT sweet vinegar. In a bowl, mix 'massive Black Vinegar (Zhenjiang)', soy, 'massive grated garlic', 'homemade chili oil (Hong You)', a pinch of sugar, MSG, and sesame oil.
- Dump the squeezed shreds into the bowl.
- Right before eating, violently toss by hand (or chopsticks) lifting the noodles to aerate, ensuring the red oil and black vinegar coat every single fiber. Garnish with cilantro.
