Instructions
- The preparation is similar to Adana Kebap, but the main feature is its lack of heat. Knead minced lamb thoroughly with onion juice, salt, black pepper, and mild sweet paprika powder (no chili peppers). Wrap the meat firmly around a flat metal skewer and rest in the fridge before grilling slowly over charcoal. Spices are kept to a minimum to enhance the meat's natural umami. Remove from the skewer when cooked and serve with grilled tomatoes.
