Instructions

  1. Cut fresh lamb leg (or beef/chicken) into bite-sized cubes. Make a marinade by mixing plain yogurt, olive oil, a little tomato paste, grated garlic, onion juice, cumin, thyme, salt, and black pepper. Massage the meat into the marinade and leave it in the fridge for half a day to overnight to tenderize the fibers. Thread the meat onto metal skewers (şiş). Grill over charcoal, rotating until the outside is charred and the inside is juicy.
