Instructions
- Knead slightly fatty minced lamb with only salt and black pepper, forming ping-pong-sized meatballs. Halve medium-sized tomatoes horizontally. On a metal skewer, alternate half a tomato, a meatball, half a tomato. Grill slowly over charcoal. As it cooks, the tomatoes soften and their sweet, tangy juices drip and soak into the meat. It is done when the tomato skins are charred.
