Instructions

  1. Wash sheep intestines thoroughly with salt and lemon to remove odors. Skewer lamb sweetbreads and tail fat as a core, and wrap the intestines tightly around it. Mount horizontally on a charcoal rotisserie and roast until crispy outside. Just before eating, slice off the surface, chop finely on a griddle, season heavily with cumin, thyme, chili flakes, and salt, and stuff into bread.
