Instructions

  1. Heat a concave thin iron griddle called 'Sac' over direct fire. Melt lamb tail fat and sear finely chopped lamb over high heat. Once moisture evaporates, add chopped onions, green chilies, and garlic. When vegetables soften, add plenty of peeled and chopped ripe tomatoes, seasoning with salt, black pepper, and thyme. Simmer lightly in the tomato juices, and serve sizzling hot directly on the griddle.
