Instructions
- Slice eggplants lengthwise 5mm thick, and briefly deep-fry until soft. Sauté diced beef with onions, green peppers, and garlic, seasoning with tomato paste and salt/pepper to make a stew. Line a small deep bowl with the fried eggplants in a radial cross pattern. Fill the hollow generously with the meat stew, and fold the hanging eggplant ends over to completely enclose the meat. Invert the bowl onto a baking dish, pour tomato sauce, and bake.
